Located on tribal land, Kai serves lavish cuisine inspired by the local Pima and Maricopa tribes, with ingredients sourced almost exclusively from Native purveyors. Kai means “seed” in the Pima language. Much of the produce is from the Native Seed/SEARCH Foundation, which preserves seeds from plants that would otherwise be at risk of extinction. Try grilled tenderloin of tribal buffalo with smoked corn purée, cholla (cactus) buds, chorizo, scarlet runner bean chili and saguaro blossom syrup. And did we mention it has one of Arizona’s best wine lists? Yes, there is fierce competition for that honor.
