Chef Austin Johnson took all he learned about local ingredients at the helm of Frenchie in Paris, and transported it to New York City’s Tribeca. He’s partnered with Master Sommelier Dustin Wilson in an eponymous building that holds a subversive place in music history as the address for John and Yoko’s Nutopian Embassy. Many ingredients—even the hops in the house beer—are from the restaurant’s own organic Rigol Hill Farm in upstate New York. The wine program’s motto is “never self-serious, always wine-serious” and features primarily small, family-owned establishments.
