When this Monterey County favorite opened in 1997, the strategy to only source seafood that was responsibly farmed or caught, or just use local, organic produce didn’t make for a great business plan. Luckily, it became a model for the region’s restaurants. Passionfish maintains regular training on environmental and social issues for the entire staff, as well as lessons on sustainability. We also can’t deny that a favorite feature here is the extensive wine list priced at close to retail.
