Saint-Germain is two concepts in one space: A casual, French-inspired wine bar and a luxurious five-course tasting menu in a cozy dining room. The combo makes for one of the most exciting wine and food spots in a city with no shortage of them. Chefs Blake Aguillard and Trey Smith, along with GM Drew Delaughter and sommelier Bodhi Landa, were influenced by Parisian natural wine bars, but the menu is decidedly luxe. Tuck into gougères filled with scallop brandade, grilled hay-aged squab, and sustainable Kaluga caviar dolloped on strips of jamón ibérico. During the third week of the month, the tasting menu is entirely vegetarian.
